Petra Jordanian Cuisine – 5/18, 6/29, 9/28, 10/26

About the Business: Petra Jordanian Cuisine was founded at Nibble Kitchen in 2022 by then Chef-in-Residence Abdullah Srour, owner and operator. After a career in aviation in Jordan, upon moving to Somerville Abdullah joined the Nibble Program to pursue his passion for cooking professionally, and both to share his Jordanian culture and cuisine, and to feel a little closer to home while in Somerville.

At the Market: Petra Jordanian Cuisine sells Middle Eastern staples such as hummus, baba ganoush, muhammara, and falafel, as well as some delicious lesser known Jordanian specialities like toum, a creamy and rich garlic spread, and Mujadara, a delicious blend of lentils, bulgar, capers, and deeply caramelized onions. 

Kay’s Curries – 6/15, 6/29, 7/13, 7/27

About the Business: Kay’s Curries, owned and operated by Kalpana Kethineedi, was created to solve two challenges: making traditional Indian cooking accessible for all, and supporting busy parents who want to feed their families delicious real meals but might not otherwise have the time! From these challenges Kay’s Curries was born, specializing in traditional Indian staples like biryanis and curries with handmade masalas, but in a convenient ‘just add water’ format that makes for quick and delicious home-cooked meals that are accessible for Indian and non-Indian cooks alike.

At the Market: Kay’s Curries will be selling ‘just add water’ mixes, complete with masalas and freeze-dried vegetables, plus a few snacks and desserts like the sumptuous semolina-based pudding, sooji halwa.

Golden Empadas – 7/27, 8/24, 9/7

About the Business: Diego Gomes is a graduate of the 2024 Nibble Entrepreneurship Program and owner of Golden Empadas. A graduate of culinary school in his native Brazil, Diego has explored the cuisines of Brazil and beyond, but during the Covid pandemic found his love for the classic Brazilian Empada (not to be confused with empanadas), a savory pie with a short crust and decadent fillings such as stewed chicken, hearts of palm, shrimp, and Diego’s personal favorite, pizza! 

At the Market: Golden Empadas will sell frozen empadas in a variety of sizes and flavors for customers to prepare at home, as well as a selection of fresh empadas to be enjoyed at the market!

Dos Manos Kitchen – 6/15, 8/10, 9/28, 10/26  

About the Business: After 15+ in the Boston restaurant industry Edwin Orellana formed Dos Manos Kitchen in 2020 to focus on his own cuisine inspired by his upbringing in El Salvador. His family cultivated milpa (corn plants) and the maiz (corn) and masa harina (corn flour) form the foundation for Chef Edwin’s menu at Dos Manos Kitchen, particularly his pupusas, corn tortillas stuffed with fillings like ancho chile & orange marinated chicken and fried on the plancha. Edwin operated Dos Manos Kitchen as the Chef-in-Residence at Nibble Kitchen from 2021-2023 before graduating on to focus on retail sales, pop-up events, and cooking classes.

At the Market: Dos Manos will be selling frozen pupusas and salsas to be prepared at home, as well as cooking pupusas fresh pupusas on-site for guests to enjoy while shopping the market. In addition to on-site sales, customers can learn more about Edwin’s curated private cooking classes, available both in-person and online!

CocoBelly Bites – 6/1, 8/10, 9/7

About the Business: CocoBelly Bites was founded in 2023 by sisters Paula and Doris Jones, specializing in Jamaican cuisine and the Jamaican patty in particular. Born in the Boston-area, food was always central to Paula and Doris’ connection to their family and Jamaican heritage. CocoBelly Bites is a pathway for Paula and Doris to explore their Jamaican roots more deeply and share their Jamaican culture with the Somerville community.

At the Market: CocoBelly Bites sells classic Jamaican Patties, including the best-selling beef patty, curried chicken patty, vegetarian patty with Jamaican staples like callaloo, and assorted variety packs. 

Taquisimo Tacos – 6/1, 8/24, 10/12

About the Business: Hiram Falfan created Taquisimo Tacos in 2022 and operated as a Nibble Kitchen Chef-in-Residence that same year! A Tijuana and Los Angeles native, Hiram decided after 2 decades of searching in vain for Mexican cuisine in Boston that could evoke the flavors and feelings of home, it was time to take matters into his own hands. Taquisimo specializes in beef birria, decadent cuts of beef slowly braised in roasted vegetables and chiles and served in tacos, quesadillas, and burritos alongside a mouthwatering broth (consomé) of the clarified braising liquid. Upon graduation from Nibble Kitchen Hiram opened his first Taquisimo Tacos shop just 3 doors down in Bow Market!

At the Market: Hiram and co. will be serving tacos, quesadillas, and breakfast burritos right off the griddle in addition to salsas and fresh-pressed tortillas for home use.

Riti’s Kulfi – 7/27, 8/10, 10/12

About the Business: Riti Doshi created Riti’s Kulfi Ice Cream in 2021 to fill the kulfi niche in the current ice cream market, and to recreate and share recipes from her childhood in Mumbai, India with her daughter. While there are ‘kulfi flavored ice creams’ on the market, Riti’s Kulfi is the only true kulfi-maker in the Boston-area utilizing traditional recipes, namely the intensely rich and caramelized condensed milk and egg-free recipes, that define kulfi. Riti’s Kulfi honors traditional flavors and new ideas alike with offerings like cardamom & pistachio, saffron & rose, chai masala, and more!

At the Market: Riti’s Kulfi will sell kulfi ice cream by the half pint & pint, plus (hopefully) traditional kulfi popsicles to be enjoyed at the market!

Independent Vendors

BanglaAdda Catering – 5/18, 6/15, 6/29, 7/27, 8/24, 9/28, 10/12, 10/28

About the Business: BanglaAdda was created by husband & wife team Afruza and Abu Akther in 2019 during the very first generation of Nibble Kitchen Chefs-in-Residence! BanglaAdda celebrates Bengali culture and cuisine, featuring specialities like kathi rolls on deliciously layered paratha bread, curries, biryani, sweet and savory snacks, and the crowd-favorite payesh, a rich Bengali rice pudding flavored with green cardamom, golden raisins, and saffron.

At the Market: BanglaAdda will be joining the market as a guest vendor selling a variety of curries, rice dishes, sauces, savory and sweet snacks, and of course payesh!

Pães Caseiros da Marcia – 5/18 (Nibble Kitchen), 6/22, 7/6, 7/20, 8/3, 8/31, 9/14, 10/5

About the Business: Pães Caseiros da Marcia was created by owner and operator Marcia Amaral as a way to honor her mother’s recipes and create economic independence for herself. The star of the show for Pães Caseiros da Marcia is the pillowy-soft and slightly sweet sourdough loaf, ideal for toast and toppings but truly unmatched for French toast and bread puddings. Also on Marcia’s product roster is a classic savory French sourdough and a wonderful gluten-free cake made with fresh corn and coconut.

At the Market: Marcia will be joining the Union Square Farmers’ Market as a guest vendor selling her breads and slices of cake.
