Abdullah’s menu at Nibble Kitchen includes falafel and chicken shawarma made with a delicate mix of spices including cumin, turmeric and cardamom. With this menu he plans to give customers a familiar but new take on two Middle Eastern classics. ” I choose spices carefully to give tasty and unique flavors to the food I present to customers,” says Abdullah. “I have many ideas and a lot of delicious dishes in mind that I hope to share with guests here,” says Abdullah.

His Story, and Culinary Business Dream:

When Abdullah moved to the U.S. three years ago,  he noticed that people like Middle Eastern food a lot. Now his dream is to open a business to serve fresh and high-quality Middle Eastern food prepared from scratch.

“Our cuisine has rich flavors and is healthy at the same time,” Abdullah explains. “In Jordanian culture, sharing food with family and friends is a way we show our care and love.  My mother is a great cook and when I moved by myself to another city for work I discovered that I also loved to cook and was good at it. My friends loved it when I cooked for them and encouraged me to be a chef.”
