A few weeks back, the Arts Council and SomerViva threw a Festival del Maíz y Música Salsa — it was a blast! In addition to some great performances and a salsa party, it was a celebration of all things corn. So, we asked one of our Nibble cooks, Estela Calzada, to give a demonstration on how to grind corn to make masa for tortillas using a centuries-old cooking device: a metate. Check out this video of Estela’s demo and you’ll learn about this back-breaking cooking method that is still used in rural parts of Mexico. Then be thankful you can just go to the store to buy a stack of tortillas!
