Back in March we launched the first Nibble Entrepreneurship Program online. Haiti, Puerto Rico, Mexico, Jordan, India, and Cape Verde, were the countries represented by our new students, all of them Somerville community members. Normally, we would meet in person. But we are not living in a regular time, so the workshops were via Zoom; one entrepreneur dialed in from Jordan each week! (See her final presentation dish at the top, rice balls.)
Our new entrepreneurs learned about what it entails to launch a culinary career from local food experts—on topics ranging from food safety to marketing and licensing. Alberto Cabre, Casa B owner, presented on pricing a product; he emphasized the importance of putting what you are in your business: your expertise, culture and values.
It will take time until our new folks test their food products and have a vending opportunity at Nibble Kitchen. But please stay tuned because Indian Kichari, Persian Macaroni with a Puerto Rican twist, and Mexican Milanesa are only some of the dishes that are on the Nibble bench! Hungry already?
